Grilled Beef Chili

This Recipe features the tasty combo of ground chorizo, ground beef, and ranch-style beans all melting together with veggies and spices inside a Dutch oven that cooks directly on your grill.


INGREDIENTS:

1 Pound ground chorizo

2 Pounds fresh ground beef

2 Tablespoon butter

1 green bell pepper, diced

1 red bell pepper, diced

1 yellow onion, diced

2 Clove garlic, minced

2 Tablespoon tomato paste

1 Can (15 oz.) ranch style beans

1 Can (15 oz.) tomato sauce

1 Can (14.5 oz.) Ro-Tel

2 Tablespoon oregano

3 Tablespoon chili powder

3 Tablespoon cumin

1 bay leaf

Salt


STEPS:

  1. Set grill temp to 350℉, preheat for 15 minutes with lid closed

  2. Brown chorizo and ground beef in a large Dutch oven over medium heat. Drain excess fat and set aside. Melt butter in the Dutch oven then add peppers and onion. Sauté for 10 minutes until onions are lightly browned. Add garlic and sauté for 2 minutes then add the meat back to the pan.

  3. Add tomato paste and cook until color changes from bright red to rust. Add beans, tomato sauce, and Ro-Tel.

  4. Bring to a simmer and stir in oregano, chili powder, cumin, and bay leaves. Season with salt to taste.

  5. Place Dutch oven directly on the grill grate and cook 45-60 minutes, adding liquid (stock, water) as needed to prevent it from getting too dry.
